What you need

  • 1 tbsp (15 ml) vegetable oil
  • 1 Medium onion, chopped
  • 1 tsp (5 ml) Dried granulated garlic
  • 1 Package frozen chopped spinach (about 1 1/2 cups or 375 ml), defrosted and drained.
  • 3 Large eggs
  • 4 tbsp (60 ml) All-purpose flour
  • 1 cup (250 ml) Cottage cheese
  • 1 cup (250 ml) Shredded cheese (old cheddar)
  • 1/2 tsp (2 ml) Salt
  • Optional: chopped ham and/or crumbled feta cheese

What to do

  • Preheat oven to 400 deg. F (200 deg. C).
  • Lightly grease or spray 12 large muffin cups.
  • Heat oil in frying pan at medium high.
  • Add onion and saute for 3 minutes.
  • Remove onion to a large bowl.
  • Stir in remaining ingredients.
  • Divide the mixture into prepared muffin cups. Bake for 35 minutes until golden brown.
  • Let cool for at least 15 minutes.
