What
you need
- 1 tbsp
(15 ml) vegetable oil
- 1 Medium
onion, chopped
- 1 tsp (5
ml) Dried granulated garlic
- 1 Package
frozen chopped spinach (about 1 1/2 cups or 375 ml), defrosted
and drained.
- 3 Large
eggs
- 4 tbsp
(60 ml) All-purpose flour
- 1 cup (250
ml) Cottage cheese
- 1 cup (250
ml) Shredded cheese (old cheddar)
- 1/2 tsp
(2 ml) Salt
- Optional:
chopped ham and/or crumbled feta cheese
What
to do
- Preheat
oven to 400 deg. F (200 deg. C).
- Lightly
grease or spray
12 large muffin cups.
- Heat oil
in frying pan at medium high.
- Add onion
and saute for
3 minutes.
- Remove
onion to a large bowl.
- Stir
in remaining ingredients.
- Divide
the mixture into prepared muffin cups. Bake for 35 minutes until
golden brown.
- Let cool
for at least 15 minutes.
